Here is a simple recipe for a traditional Thai soup called Tom Kha Gai:
Ingredients:
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
4 cups chicken broth
1 can (13.5 oz) coconut milk
2 stalks lemongrass, bruised and cut into 2-inch pieces
4 kaffir lime leaves
2 tbsp fish sauce
1 tbsp sugar
2 red Thai chilies, sliced
1 cup sliced mushrooms (optional)
2 tbsp chopped cilantro for garnish
Instructions:
In a large pot, bring the chicken broth to a simmer.
Add the chicken, lemongrass, kaffir lime leaves, fish sauce, and sugar. Simmer for 10 minutes.
Stir in the coconut milk, mushrooms (if using), and chilies. Simmer for an additional 5-7 minutes, or until the chicken is cooked through.
Remove the lemongrass and kaffir lime leaves.
Ladle the soup into bowls and garnish with cilantro.
Note: You can add more or less chilies as per your taste and you can also use shrimp or tofu instead of chicken.
