Badsahi Chicken Biryani

 Biryani is a famous dish from the Indian subcontinent, and "Badsahi chicken Biryani" is one of the most popular variations. The dish is made with a combination of tender chicken, fragrant basmati rice, and a blend of spices, making for a flavorful and satisfying meal.


Ingredients:


1 kg chicken, cut into small pieces

2 cups basmati rice

2 onions, finely chopped

2 tomatoes, finely chopped

1 cup yogurt

3 cloves garlic, minced

1 inch ginger, minced

2 green chilies, minced

2 tsp red chili powder

2 tsp coriander powder

1 tsp cumin powder

1 tsp garam masala powder

Salt to taste

2 cups water

2 tbsp ghee or oil

1 cup fried onions

2 tbsp chopped cilantro

2 tbsp chopped mint leaves

Instructions:


In a large pot or dutch oven, heat the ghee or oil over medium heat. Add the chopped onions and fry until golden brown.

Add the minced garlic, ginger, and green chilies, and fry for a minute.

Add the chopped tomatoes and fry until they turn mushy.

Add the chicken pieces, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Stir well and fry for 5-7 minutes.

Add the yogurt and stir well. Cook for another 5 minutes.

Add the water, bring the mixture to a boil.

Add the rice and stir well. Bring the mixture to a boil again.

Cover the pot with a tight-fitting lid and simmer on low heat for 20-25 minutes or until the rice is cooked and the chicken is tender.

Once the rice is cooked, turn off the heat and let it sit for 10 minutes.

Fluff the rice gently with a fork and stir in the fried onions, cilantro, and mint leaves.

Serve hot with raita or chutney.
